There are several stages and much effort that go in to producing a banana ready to eat with the most important being the ‘ripening’ process. As a leading banana merchant Star Fruit ripens bananas which are received at our specialized banana ripening facilities. There, our experienced ripeners pass the quality assurance process and condition the fruit to a customers specific colour requirement.

There are a vast variety of bananas worldwide with a global production of 12 million tones per annum, in gross value, bananas are the fourth most important food crop in the world behind rice, wheat and maize. Cavendish
The most popular and sought after variety is Cavendish. Grown in both Tropical Far North Queensland and Northern New South Wales the Cavendish is a large banana that can be can be eaten fresh at various stages of ripeness, cooked or even eaten dried. Cavendish is the world’s best known eating banana and accounts for approximately 90% of Australia’s banana production, with more than one billion eaten each year.
Lady Fingers This sweet banana has a delicate flavour. They are ideal for fruit salads and decorating desserts, as they do not brown when cut. It is important that Lady Fingers are allowed to become fully ripe before using to enjoy their maximum flavour, as unripe Lady Fingers will taste dry and starchy. Brown flecks on the skin that has also become quite thin indicate mature ripeness and sweet flavour.
